Post-Christmas wrap up

Christmas is over and all things considered, it went very well. Things I learned:
  • Always start dinner sooner than planned
  • Always start the gift making sooner than planned
Every year Mom and I go back and forth about who should get a Christmas gift. I err on the side that less is more while Mom wants to keep the extended family included, even though we never see nor speak to them unless there's a wedding or a funeral. As this year has been hectic, we decided to forgo the traditional gift-giving and instead much merriment went into making heart-felt, homemade cookies and the ever-fabulous Creme de Vie (Cuban eggnog).

I waited until the last minute to buy the ingredients and never got around to testing the recipes. A cookie is a cookie, though, and anything tastes good with rum so I figured it would be OK.

Next year I'd like to try another cookie recipe -- something that involves cookie cutters and less steps. Here's the Creme de Vie recipe because yummy Cuban goodness should be everywhere.

Creme de Vie (courtesy of My Big Fat Cuban Family blog)
1 can condensed milk
1 can evaporated milk
6 egg yolks
2 cups sugar
1 cup water
1 tsp vanilla
1/2 cup rum
Mix the sugar and water until the sugar is dissolved over very low heat, stirring constantly -- about 3 minutes. It has to be low so the sugar doesn't caramelize, but makes a thick sugary water. Put the egg yolks in a blender and mix with the condensed milk. Slowly add the evaporated milk and mix completely. Flavor with the vanilla. Add the sugar water and finally the rum. This makes enough for almost a bottle and a half of egg nog.

Thankfully there's plenty of time to plan next year's gifts and recuperate from the marathon cooking session.
